For Jellyfin? You really don’t need much. A raspberry pi can run jellyfin if you don’t have a transcoded format. My main server is only using a 6th gen i3, and Jellyfin runs perfectly for everything. Never tried going above 1080p though.

If you like Enless Sky, play EV Nova. It’s the best space game ever made. Don’t trust the Vellos tho

If you’re looking for Endless Sky but infinitely more autistic (in a good way), try Starsector as well. A lot more complicated, but you can literally build a civilization and genocide the rest of the galaxy if you want.
