There are some pre-organized modpacks that can be installed one-click via Wabbajack (which is what I used when I had Windows, on Linux you’re currently out of luck but the Nexus Mod Manager team is working on supporting it).
Viva New Vegas is one that improves the general UX while sticking to the original as far as possible if memory serves.
Edit: I ALSO URGE you to find the time for New Vegas because it is one of very few games that I keep coming back to every couple of years.
